Bertrand Minchin makes a classic example of Pinot Noir in Menetou Salon sourced from scattered plots with Kimmeridgian soils throughout the appellation. Grapes are hand harvested, destemmed, and fermented in oak vats, followed by a long gentle maceration (3-4 weeks). Aged for 8 months in French oak vats (80%) and French oak Barrels (20%).
