In the Aube, closer to Chablis than Epernay, Dominique Moreau makes tiny quantities of this truly singular Champagne. The domaine, which Dominique named after her grandmother, Marie Courtin, produces wines from single vineyards, single varieties, and single vintages, always with zero dosage. Éfflorescence is one of Courtin's flagship bottlings. It's aged for three years in old barrels before release, yielding a particularly deep and powerful Champagne. Only 500 cases are produced annually, a minuscule fraction of which in large formats. Pinot Noir. Harvested from massale selection vines 35-40 years in age from a single parcel located in Polisot (Cote des Bar). Harvested from the bottom of the hill where there is more clay. Clay and Kimmerdigian Limestone bands similar to those found in Chablis. Farmed biodynamically and hand harvested.
