The palate reveals black fruits with grippy tannins, stretching out to a long finish. Black raspberry, menthol, and savory black olive notes. The Syrah is hand-harvested, 100% destemmed, fermented with native yeast in cool concrete vats, racked twice and matured in old neutral oak for 10 months before bottling unfiltered. The Serine Clone of Syrah is local to this region, dates back to ancient times, and offers enhanced perfume and aromatics, from more open clusters and oval-shaped grapes. The winery maintains its own nursery to preserve and propagate this unique local clone.
