- The vineyard site Pfaffenwies was initially mentioned as ‘pafenwies’ (in the document from 1211) and later as ‘pfaffenwissen’ (1235). It was named after Pastor Dydo, also known as ‘Pfaffe’. This steep site (with slopes up to 45 percent) is situated between 90 to 160 meters above the sea level. The soil here is a combination of stony Hunrück slate and Taunus quartzite, with loess in the lower parts. Natural fermentation and aging in stainless steel and used oak.
