Biodynamic. 100% Chardonnay from Le Grand Bessy vineyard planted in 1983. Clay-limestone with marl subsoil. Manually harvested with sorting done at the vine. Pressed into barrel in an old vertical press. Native fermentation and malo in barrel. 15-18 months in barrel (15% new). No racking, fining or filtering. A homeopathic (1 g/HL) dose of SO2 added only just prior to bottling. 4,394 bottles produced. |
