Winemaker notes: Grenache and Counoise are common blend buddies for Rosé in the Provençe region of France. Inspired by what the French do with their rosé, I started adding Counoise to the blend about three years ago,and I continue to learn more about blending with the variety every year. Counoise is savory and smells like oolong tea as it ferments. I love it as an accompaniment to the Grenache, which on its own can be a bit simple and candy-flavored. I find as the years progress that I keep adding a bit more Counoise, as I think it makes the Sparkling Rosé taste a little more sophisticated. Notes of hibiscus flower, jasmine tea, watermelon, rose petal and a touch of strawberry make this rosé my new go-to bubbly.
