Our 2021 Viognier is organically-grown on our Fiddletown estate in granitic soils. Zesty fresh, floral, and spicy aromatics with fruit notes that suggest classic white peach and apricot flavors. The grapes were harvested on September 23rd. We harvested at 24.2 brix, whole-cluster pressed to tank; fermented to dry in stainless and then transferred to a set of older French oak barrels with a couple special new barrels that are coopered in Condrieu thrown in the mix. Lees stirring, malolactic fermentation, and no racking off of primary lees are all techniques employed prior to bottling.
